st-RAW-berry Desserts

I’ve been wanting to try to make a raw dessert for a while now. I LOVE dessert and I always have a lot of fruit around so this is result of all of that. I just kinda looked at things on pinterest (here is mine by the way) and also spotted this gem on PlantStrongVegan which gave me inspiration. Hers looks way better but my concoction came out pretty descent. So here we go!

Crust:

4 dates

1 heaping cup of walnuts

1T + 1t cocoa powder

1/8 t nutmeg

1/4 t cinnamon

1 t vanilla

1/4 t salt

1t melted coconut oil

*Pluse together in a food processor until crumbly – I over did mine this time and it was a little mushy (still yummy). I wish I had left ot a bit more chunky

Strawberry Top:

2 c chopped strawberries

1/2 t coconut oil

1/2 t maple syrup

a pinch of salt

*blend or food processor this and assemble the crusts into remekins and pour strawberries on top. Refrigerate over night (or a few hours…whatever). I would eat them with in a day or two because the strawberry layer starts invading the crust pretty quickly.

Vegan Breakfast Shake

I actually made something I found on pinterest. That almost never happens. This raw vegan shake is from Rocki’s Rock’n Blog.

It looks like dessert and taste like dessert but let’s call it breakfast. I think I’ll be making this all until my blender gives out. That or I die of brain freeze.

Here are the directions from Rocki’s blog:

Step 1:
2 very ripe frozen bananas
1 cup pure coconut water
1 Tbs protein powder
1 Tbs hemp seeds
vanilla bean or 1 tsp vanilla
1 cup ice

Blend the above.  Pour half or more of this vanilla mixture into a tall glass and leave the rest in the blender.

Step 2:
Add 1 Tbs or more of cacao powder to the remaining mixture in the blender and blend briefly until combined.  Pour slowly on top of the vanilla mixture.  I garnished mine with coconut and cacao nibs, but you can garnish any way you want or not.

Note: if you do not have very ripe bananas and/or like it more on the sweeter side, simply add sweetener of choice in Step 1.

*I’m totally going to make this again (many times over) and throw in some peanut butter.

End of Raw Challenge Day 25

Well well well. My raw challenge was definitely a challenge. I’d say weeks 1 and 2 I stuck with it the most. For the first two weeks I’d say I ate about 90% raw. I added in tofu to my salads and had a little not raw peanut butter. The last two weeks I always ate raw for breakfast (that was easy, just a smoothie!) But think I went to about 50% raw. I tried to eat fruit for lunch but also ate other cooked veggies with it and sometimes cous cous. I also stuck to big salads for dinner the majority of the time. I ate really well for the most part but I did end up cooking my veggies here and there. Oh ya and I had Thai food yesterday. Moving on!

My after pictures are pretty much the same as the before pictures but I’ll post anyway.

Stats are pretty much the same but I gained 1.2 pounds (I’m blaming my period for that). Here is the Day 1 post.

So here are my thought on going raw:

I had not read up on anything before I started. I’m not knowledgeable about how certain foods or nutrients are absorbed in my body. It’s hard for me to understand how eating monomeals (ex:a meal of all bananas or all mangos) is good for you. I’m not saying it’s bad or good for you because I honestly have no idea the science behind it but even if it’s great for you it’s still hard to do! I think 21 days is a quick amount of time to change your whole lifestyle but it’s a start that can open some doors.

I know when I started I was for sure NOT eating enough calories. This made me lightheaded and so I stopped exercising. I really was doing it all wrong. Fully Raw Kristina promotes eating enough and always staying active and even did a video on all top challenges you’d face going raw, almost all of which I faced.

It was so hard for me. Even after eating a HUGE salad for dinner I would feel so stuffed I wanted to sit and do nothing. I’m used to my food giving me energy but I was trying to eat enough and it was leaving me feeling too full.

I know FULLY raw is not a lifestyle I plan on adopting but it did have it’s benefits!

What I did enjoy about going raw:

My skin was lovely! Since going vegan my skin has looked so much better than ever before but I’d still have little issues. My skin was so soft the past few weeks and I didn’t break out as much as usual when I started my period.

I got to try new recipes! When I went vegan it really did broaden my food horizons! So many new foods and flavors were introduced to me. I LOVE eating and being vegan has opened so many doors to  wonderful new foods I don’t think I would have discovered had I not made the switch. I think going raw allowed me to try things in a new way. For starters I discovered buckwheat groats! And dates…omg I love dates. I had eaten them before but now they are my besties for life.

I’m really going to try to incorporate more raw foods into my diet but as for 100% raw, I don’t think it’s for me at this point in my life. Never say never! When I was vegetarian I said I’d NEVER go vegan and here I am almost 3.5 years in and I can’t imagine going back. It’s the best decision I’ve made in my life thus far and I mean that to my core. It’s brought so much love, life, and happiness into my life and I’m sorry to sound like such a hippie tree hugger but It really has changed my life!

I fully support the “do what you can” attitude in making the switch to eating more plant based foods and less animal products. If you’re not ready to go vegan, don’t! Try meatless mondays. Just start buying almond milk (or soy or coconut or whatever) instead of cows milk (my sis made a good post about dairy you can check out if you’re wondering why cow’s milk is not so great for you). You love bacon? Well give up all meat and eat your bacon. It’s better than just throwing in the towel because it seems too hard daunting.

Breakfast Groats (what’s a groat?)

I found this recipe from Laura Miller’s Sidesaddle Kitchen  on her youtube channel who’s tag line is RAW. VEGAN. NOT GROSS. She’s awesome and hilarious and always posts the curtest veggie selfies.

This is a wonderful non smoothie breakfast that you can eat as a cereal or mix with fruit and add a cashew cream. I had no idea what buckwheat groats were. It’s often sold ground up so you can make an oatmeal like hot cereal but for this you’ll need the whole groat which is a seed.

You need to soak some stuff for a few hours so don’t try and make this when you’re super hungry and ready to eat.

I soaked my 2 cups of buckwheat groats overnight.

Cereal:
2 cups buckwheat groats, soaked 1 hour
1/2 c maple syrup
2 t cinnamon
1 t salt
1/8 t stevia (I used coconut sugar mixed with stevia)

Cereal
1. Soak buckwheat groats for at least one hour, then rinse
2. Combine all remaining ingredients in a medium-sized bowl
3. Mix thoroughly
4. Spread on a teflex sheet and dehydrate overnight or bake on a silpat in oven at 200 degrees for 1 hour (
5. Pour milk over it. Cereal. Done. (Or keep reading for an even better way of eating it!)

Baked Apples: (optional)
2 apples
1 T coconut oil
1 t vanilla extract
pinch of salt
1 t cinnamon


Cut two apples into small slices, toss with coconut oil, vanilla, salt and cinnamon
Spread onto a teflex sheet and dehydrate overnight, or bake on a silpat sheet in the oven at 200 degrees for 1 hour

Cashew Cream: (optional)
2 cups cashews
½ cup maple syrup
¼ cup lemon juice
1 t vanilla extract
pinch of salt
½ cup coconut oil

Cashew Cream
1. Soak cashews for at least 1 hour, then strain and add to food processor
2. Add maple syrup, lemon juice, vanilla, salt and coconut oil then blend
3. Assemble by placing roasted apples, crumble, and optional cream in layers to make a
breakfast parfait

I layer the groats, apples, then cream until I reached the top of my jar. It was sooo good. It tasted like I should be sneaking out of bed in the middle of the night to stuff my face while feeling like I’m going to get caught. Also I could hardly finish the whole freakin’ jar but a half full jar wouldn’t have made for a very good picture. Tomorrow I’m eating this  s with some blueberries. ImageImage

Raw Day 5- Raw Pesto Lunch!

Who knew pinterest could actually be useful!? I found something on there and actually made it! This calls for a belly celebration. This pin was from luvskinny.com and you can see the recipe here.

I have been trying to follow Fully Raw Kristina’s version of raw which is low fat and does not include any oil or salt and includes very few nuts and seeds. Check out this page for details. And I think the only spice she uses is cinnamon. But I’m coming to find it’s not working for me. If I want to make this realistic for me I’m going to need to tweak some things. Also I’m losing weight too quickly (never thought I’d say that! haha) and I’m sure it’s because I’m not eating enough calories. I really want this journey to be less about following strict rules where I don’t have wiggle room and more about eating good, clean, healthful foods that give my mind and body a boost. And a life without salt is not a world I want to live in! I’ve been trying to focus on making my body something that reflects what I want to be. I want to be healthy, kind, free of cruelty, and happy most of all. I’m not saying Kristina’s lifestyle is not a great one, so instead of taking the all or nothing approach I’m adding in a few healthful foods that will keep me on a realistic (for me) raw path while still mostly looking to Kristina’s 21 day challenge for guidance.

You’ll need:

1/2 c of pine nuts

4-5 c fresh basil (I just used whatever I had which was maybe 3 or 4 cups)

1 garlic clove

1 teaspoon agave/maple syrup or a couple dates (I used 2 dates and it came out delicious!)

1/2 c olive oil – I just used enough to bring it all together and I’m sure it was much less than that

salt and pepper to taste

ImageThe pesto was really really good. I only had a tiny bit of zucchini left so I just tossed what I had left into a bowl of kale and threw in a few cherry tomatoes at the end for color and flavor. I think when I eat the rest tonight I’ll add in a bunch of stuff and make it a big meal. Image

Raw Zucchini “Pasta” with Marinara

Raw Update: I know I’m not eating enough calories. When reading this recipe keep in mind Kristina eats this ALL herself. 5-7 zucchinis and all the sauce! There was NO WAY I could have eaten all of this. I wasn’t about to kill myself on day 2! I have been really hungry and a little lightheaded and my eyes were hurting. Haha, wow this sounds bad. I’m going to try and eat more and give it a few days and if I’m not feeling better I think I’ll need to ease into this by adding a side of beans or tofu to lunch and dinner.

I decided to put my food processor to use since I don’t have the equipment Kristina uses. This recipe is from Fully Raw Kristina. To be honest, it was just ok.  My sauce came out a tad watery. I used steamed beets from Trader Joes instead of  a raw beet (opps). Maybe I didn’t add enough herbs? The recipe was vague.

FULLYRAW PASTA WITH MARINARA!

Approx. 600 calories max.

Low Fat Ingredients:

3-4 Cartons Cherry/Grape Tomatoes

Stems of Swiss Chard

1 Bunch Cilantro

Fresh Basil Fresh Thyme Fresh Oregano

1 Beet

Dash of Cinnamon

5-6 Large Zucchinis

Spiralize the zucchinis into pasta using a spiralizer. (I used a food processor to shred it)

Blend all other ingredients in a Vitamix, pour over the pasta. (I used a food processor)

Fully Raw Day 1

Ok guys…I’m a little nervous but I’m going fully raw (ok it will probably end up being MOSTLY raw) for the next 21 days! I’ve never tried going raw before so this may be a bit challenging seeing as I love pizza and chips. I had some delicious Indian food  and then ate at Healthy Junk last night to go out with a bang.

So I have somehow convinced my mother to do the challenge with me (not vegan at all) and as motivation to stick with it I’m posting our weights and measurements (she won’t let me post her before pictures)!

Stephanie: 115 lbs

I’m following Fully Raw Kristina’s 21 Day Challege. She says the number one mistake when going raw is not eating enough. So I’m going to try my best to keep eating (that’s never been a problem before!) I spent so much money yesterday on fruit and only got about half the things on her week 1 list. I’m going to just buy organic for the dirty dozen and get the rest at cheap corner markets and see if that helps.

Day one I made her Sunbust Juice

Ingredients:

1-2 Large Pineapples, Sliced

5-7 Pink Lady for Fuji Apples

Juice of 7 Oranges

Juice of 1 Lemon

3-4 Leaves of Kale

Run all ingredients through your juicer, strain, and enjoy!  (I didn’t strain mine)
