I’ve been wanting to try to make a raw dessert for a while now. I LOVE dessert and I always have a lot of fruit around so this is result of all of that. I just kinda looked at things on pinterest (here is mine by the way) and also spotted this gem on PlantStrongVegan which gave me inspiration. Hers looks way better but my concoction came out pretty descent. So here we go!
Crust:
4 dates
1 heaping cup of walnuts
1T + 1t cocoa powder
1/8 t nutmeg
1/4 t cinnamon
1 t vanilla
1/4 t salt
1t melted coconut oil
*Pluse together in a food processor until crumbly – I over did mine this time and it was a little mushy (still yummy). I wish I had left ot a bit more chunky
Strawberry Top:
2 c chopped strawberries
1/2 t coconut oil
1/2 t maple syrup
a pinch of salt
*blend or food processor this and assemble the crusts into remekins and pour strawberries on top. Refrigerate over night (or a few hours…whatever). I would eat them with in a day or two because the strawberry layer starts invading the crust pretty quickly.
Found this recipe on Pinterest and it’s from a cute mom blog called Raising Hardy Boys Keeping them Fit and Fed. It’s super simple and pretty tasty.
Here is what you’ll need:
6T chia seeds
6Tsweetener of choice ( I used a coconut sugar/stevia mix)
1.5 c liquid of choice (I used 1 cup fresh coconut water from a young coconut and half a cup of unsweetened almond milk)
3T cocoa powder
1.5t vanilla
All you have to do is whisk it all together and let it sit. I popped mine in the fridge and came back to it later but you really just need to wait about 15 minutes for the chia seeds to get all crazy thick.
I meant to top it with some berries but forgot and ate all the berries for breakfast so I used so of my leftover buckwheat groats and holy cow! It was great!

This too is from Chole’s Vegan Desserts. This cake was super easy and quick to make and it was DELICIOUS! I took it to a NYE party so I wouldn’t end up eating it all myself and I got a lot of compliments on it.

Dry Ingredients:
2c all purpose flour
1t baking soda
1t baking powered
1/2 t salt
1/2c evoo
3/4 c maple syrup
3/4 c water
1/4 c lemon juice
2T lemon zest (about 2 lemons)
1T lemon extract (I didn’t have this so I didn’t use it, I added a tad more lemon juice and zest)
powdered sugar for garnish
fresh berries for garnish

I got the recipe from Full Raw Kristina. My sister made it and it was uhhh gaaahh bahh so good and I had to have more so I made some for myself.
What you need:
2 young coconuts
Vanilla
3 dates
jam
Peaches
What to do:
Scrape out the meat from 2 young coconuts, if you ever get them open that is. Any tips on how to do this would be much appreciated. Add meat, dates, vanilla, and enough coconut water to help it blend up (start with very little, you can always add more!).
That’s pretty much it. Fully Raw Kristina used Saturn peaches; I just cut the ends of regular sized peaches. Add some jam and top with cream and sprinkles because why the hell not? Eat up! Or just eat that stuff right out of the blender and watch the Price is Right.
