Before I moved to San Francisco, the girls and I would get together for a vegan girl’s night every once in a while. None of them are vegan but a few dabble with vegetarianism and so we could all eat everything we just made it a vegan night (my girls are awesome).
So now that it’s been 2.5 years since our last vegan night, we were overdue and needed an excuse to go over and see Mayela’s cute apartment.

Oh here are the cookies I made from Chloe’s Vegan Desserts by Chloe Coscarelli





2 c all purpose flour
1 t baking soda
1 t baking powder
1 1/2 t ground ginger
1 t ground cinnamon
1/2 t ground nutmeg
1/2 t ground cloves
1/2 c vegan butter
3/4 c sugar plus more for rolling
1/2 c molasses
1 T water
* t = teaspoon
T = Tablespoon
c = cups
Preheat 350°
line 2 baking sheets with parchment paper
In a medium bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, nutmeg, and cloves
Using a stand or hand mixer, beat butter, sugar, molasses, and water until well combined. Slowly beat in flour mixture. Scoop 1 round T of dough at a time and roll the top in sugar. Bake 10-12 minutes Let cool on the pan.
