Just shy of a week into my Poor Girl Pantry Challenge and I’m doing pretty well. I DID go to the store to get Kale, Cauliflower, Tortillas, and Chalua…I needed it ok?
But here are a few images of the things I’ve been able to put together using what was already in my kitchen.

Day One:
B: Shredded Spoonfulls with walnuts, cinnamon, raisins, dried cranberries, shredded coconut with almond milk.
L: Brown Rice with sage, thyme, sweet potato.
D: More rice from lunch with frozen goyozas from Trader Joe’s.
Day 2:
B: Banana, Frozen banana, frozen blueberry, pinch of salt, coconut butter, agave, vanilla extract, coconut water, almond milk, shredded coconut.
My last slice of bread (garlic sourdoughs with butter)
L: Earth Balance Mac & Cheese with kale and Chalua
D: I don’t remember…more rice?
Day 3:
B: Banana, frozen bananas, peanut butter, baking coco, salt, dates, coconut water, almond milk, vanilla extract
L: Brown rice from day 1 with soyrizo
D: A fatty burrito from Gus’s Lunch Box
Day 4:
B: Shredded Spoonfulls with walnuts, cinnamon, raisins, dried cranberries, shredded coconut
L: Kale, quinoa with raisins and dried cranberries and lemon dressing ( oil, lemon juice, Dijon mustard, salt, pepper, agave, garlic, rice vinegar)
D: Day 3 rice with Kale and edemame
Day 5:
B: Rolled oats with blended bananas, salt, cinnamon, vanilla extract, coconut butter. Topped with shredded coconut and walnuts
D: Stuff from whole foods because I was on the go!
Everyday I ate way too much chocolate
