Get In My Belly, Oatmeal Edition

Hey, You. Ya, YOU. Make your breakfast for the week NOW!

It’s been a while since I’ve had oatmeal for breakfast since I did that whole raw thing and started drinking smoothies every morning. But, this was a life saver for me when I was working 40 hours a week and getting up super early. I’d just make a shit ton of oatmeal and then portion it out into jars. In the morning I’d just grab a jar, heat it up at work, and chow down.

So much better for you than packet oatmeal that has TONS of sugar and crap added. This is so healthy and yummy. I used to make it for the kiddos at work (worked at a pre-k) and they loved it and it made the school smell like dessert. Image

Here we go:

Boil 6 or 7 cups of water

Add:

2 teaspoon of salt

3 c old fashion roller oats **This also works really well with steal cut oats. It will just take longer to cook.

2 c fresh fruit (I love apples in this)

2 t cinnonon

1/3 c golden raisins

3 t vanilla

2 T maple syrup or agave (or vegan brown sugar…less healthy but yummy)

Cook about 20-30 minutes uncovered. If using steal cut oats it might take around 45 minutes. Long, I know but so worth it!

Portion it out into jars or containers for the week (I only had 2 good sized jars and one HUGE jar so it should make 4-5 days worth)

Top with some more fresh fruit, walnuts, and a little maple syrup and you’re all set!

*When you reheat the other jars during the week you’ll have to add in a bit of water to un-clump it.
